Duck Leg –  confit duck leg rillette, parsnip puree, cabbage slaw, sour dough crouton

Tuna – yellowfin tuna carpaccio, confit quail egg yolk, black olive, frisse, candied walnuts

Pigeon – pan roasted pigeon breast, liver parfait, spiced plum, hazelnuts

Venison – pan roasted venison haunch, salt baked celeriac, caverlo nero, rose hips, roasted shallot

Halibut – pan fried halibut, confit cepes, grilled baby onions, smoked bacon, creamed potato

Pre-Dessert

Blueberry – panna cotta, puree, toasted meringue, pistachio, butter milk sorbet
